Cod Liver Carbonara
Prep Time: 30 min
Ingredients
- 1 Tin of Cod Liver
- 200g of Pasta
- 2 cloves of Garlic
- 2 Shallot
- 130g of Cod Fillet
- 2 Tablespoons of Parsley
- 2 Tablespoons of White Wine
- 10 sprigs of Parsley
- 2 Tablespoons of Fish Stock
- 2 Tablespoons of White Wine
- 2 Egg Yolks
- ½ Lemon
- 20g of Grated Parmesan Cheese
- Olive Oil, Salt & Pepper (Add according to preference)
- Boil a pot of water, add in a pinch of salt and cook pasta al dente. Drain and set pasta aside.
- Chop the cloves of garlic and shallots, heat some olive oil in a frying pan and toss in the chopped vegetables. Cook until fragrant.
- Chop cod fillet and add to the pan. Cook for approximately 3 minutes.
- Add cod liver and cook for about 3 more minutes.
- Add in the white wine and fish stock and wait till reduced.
- In a separate bowl, mix the egg yolks with grated parmesan cheese and season with black pepper.
- Add in the egg mixture to the pasta and mix well.
- Chop the parsley, squeeze some lemon juice, mix and enjoy.
Cod Liver Pate
Prep Tim: 10 Min
Ingredients:
- 1 Tin of Cod Liver
- 1 Boiled Egg
- 1 Small Boiled Potato
- 1 Small Onion
- 20 g of Hard Cheese
- 1 Tablespoon of Mustard
- Chop the onion into small pieces and mix in mustard
- Pour the onion/mustard mixture with hot boiling water.
- Boil for two minutes and strain the water. Let the sauce cool down.
- Mash the cod liver with a fork and mix it with the sauce.
- Puree the potato, grate the cheese and mix in with the liver.
- Grate the egg and mix with the pate mixture.
- Let the pate cool down and enjoy on a slice of toasted bread or a cracker.
Cod Liver Salad
Prep Time: 30 Min
Ingredients:
- 1 Tin of Cod Liver
- 2-3 Small Potatoes
- 2 Eggs
- 1 Small Carrot
- Several Prunes
- Green Onion (to taste)
- 100g of Mayonnaise
- Salt (to taste)
- Pinch of Black Pepper
- Boil, chill and clean the shell off the eggs. Separate outer layer from yolk.
- Open the tin of cod liver, pour oil off the top and then break the liver with a fork.
- In a rounded glass bowl, create the first layer with grated boiled potatoes.
- Create the next layer with cod liver and a little mayonnaise
- Cut the feather of the green onions into rings, place on top of the cod liver and add a little mayonnaise
- Add a layer of grated boiled carrots and add in a little more mayonnaise
- Wash the prunes and pre-heat them in boiling water. Cut out the dried portion and put them on top of the carrots and add mayonnaise
- Add on the crush egg yolks as the final layer
- You can decorate the salad with herbs, cranberries, pomegranate seeds and a wide number of other toppings
